Method
 

  1. Season salmon. Pat salmon dry and season with salt and pepper.
  2. Sear. Heat olive oil in a large skillet over medium high heat. Add salmon skin side down and cook 4 to 5 minutes until crisp. Flip and cook 2 to 3 minutes more, then transfer salmon to a plate.
  3. Make the sauce. Reduce heat to medium. Add butter and garlic and cook 30 seconds. Stir in honey, soy sauce, lemon juice, and Dijon if using. Simmer 1 to 2 minutes. For a thicker glaze, stir in cornstarch slurry and simmer 30 seconds.
  4. Glaze. Return salmon to the pan and spoon sauce over the top for 30 to 60 seconds.
  5. Serve. Garnish and serve with lemon wedges.
