Ingredients
  

  • 3 medium ripe bananas mashed, about 1.5 cups
  • 1/3 cup honey or maple syrup
  • 1/2 cup nonfat Greek yogurt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 cups oat flour
  • 2 scoops vanilla protein powder about 60g
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp cinnamon
  • 1/4 cup chopped walnuts optional

Method
 

  1. **Heat.** Preheat oven to 350F. Line a 12 cup muffin tin with paper liners.
  2. **Mash.** Mash bananas in a large bowl with a fork. Whisk in honey, Greek yogurt, eggs, and vanilla.
  3. **Combine.** In a separate bowl whisk oat flour, protein powder, baking powder, baking soda, salt, and cinnamon.
  4. **Mix.** Fold dry into wet until just combined. Stir in walnuts if using.
  5. **Scoop.** Divide among muffin cups about 3/4 full.
  6. **Bake.** Bake 22 to 25 minutes until a toothpick comes out clean.
  7. **Cool.** Cool in the pan 5 minutes then transfer to a wire rack.

Notes

Use very ripe bananas with brown spots for best banana flavor. Use vanilla whey or plant protein, both work great. Do not overmix or the muffins toughen up.
