Beef and Broccoli Stir Fry

Tender beef and crisp broccoli in a glossy ginger garlic sauce. Better than takeout, ready in 25 minutes.

Ingredients
  

  • 1 1/4 lbs flank steak sliced thin against the grain
  • 2 tbsp cornstarch divided
  • 1 tbsp soy sauce for marinade
  • 1 tsp toasted sesame oil
  • 4 cups broccoli florets
  • 3 tbsp neutral oil
  • 4 cloves garlic minced
  • 1 tbsp fresh grated ginger
  • 1/3 cup low-sodium soy sauce
  • 3 tbsp oyster sauce
  • 2 tbsp brown sugar
  • 1/2 cup low-sodium beef broth
  • 3 cups cooked white rice
  • 2 green onions sliced
  • 1 tbsp toasted sesame seeds

Method
 

  1. Toss sliced beef with 1 tbsp cornstarch, 1 tbsp soy sauce, and 1 tsp sesame oil. Sit 10 minutes.
  2. Whisk sauce ingredients with remaining 1 tbsp cornstarch until smooth.
  3. Heat 2 tbsp oil in a wok over high heat. Sear beef 1 to 2 minutes per side. Move to a plate.
  4. Add 1 tbsp oil, broccoli, garlic, and ginger to the hot pan. Toss 3 to 4 minutes until bright green.
  5. Return beef. Pour sauce over top. Toss 1 to 2 minutes until thick and glossy. Serve over rice with green onions and sesame seeds.

Notes

Slice beef thin against the grain. Velvet with cornstarch and soy sauce. Have everything prepped before you turn on the heat.
