Breakfast Quesadilla

A delicious homemade breakfast quesadilla recipe.

Ingredients
  

  • 2 large flour tortillas 10-inch
  • 4 large eggs
  • 1 cup shredded cheddar or Mexican blend cheese
  • 4 slices cooked bacon, crumbled
  • 2 tablespoons butter
  • Salt and pepper to taste

Method
 

  1. Scramble. Beat eggs with salt and pepper. Melt 1 tablespoon butter in a skillet over medium heat and scramble eggs until just set but still soft, about 2 minutes. Remove to a plate.
  2. Build. Lay a tortilla flat. Spread half the cheese on one half, top with scrambled eggs, crumbled bacon, then the rest of the cheese. Fold in half.
  3. Crisp. Melt remaining butter in the skillet over medium heat. Place the quesadilla in the pan and cook 2 to 3 minutes per side until golden and crispy and the cheese is melted.
  4. Serve. Slice into wedges and serve with salsa, sour cream, or hot sauce on the side.

Notes

Scramble the eggs slightly underdone since they will continue cooking inside the quesadilla. Use a large tortilla so you have room to fold without spilling the filling. Press gently with a spatula while cooking for even contact and crispier edges.
