Buffalo Chicken Dip

Creamy, cheesy buffalo chicken dip baked until bubbly and perfect for chips, crackers, or veggies.

Ingredients
  

  • 2 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1/2 cup buffalo hot sauce, plus more to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella (or Monterey Jack)
  • 2 tbsp sour cream or Greek yogurt (optional)
  • sliced green onions (optional)

Method
 

  1. Prep. Heat oven to 375F. Lightly grease a small baking dish (about 8x8).
  2. Mix. In a bowl, stir together cream cheese, ranch (or blue cheese) dressing, hot sauce, and sour cream (if using) until smooth.
  3. Add chicken and cheese. Fold in shredded chicken and half of the cheddar and mozzarella.
  4. Top. Spread into the baking dish and sprinkle remaining cheese over the top.
  5. Bake. Bake 18 to 22 minutes until hot and bubbling around the edges.
  6. Finish. Optional: broil 1 to 2 minutes for a golden top. Top with green onions and serve warm.

Notes

  • Rotisserie chicken makes this extra fast.
  • If the dip seems too thick after baking, stir in a splash of dressing or a spoonful of hot sauce.
  • Leftovers reheat best in the oven or microwave in short bursts, stirring in between.
