Caprese Skewers

Fresh mozzarella, cherry tomatoes, and basil on skewers with a balsamic glaze and olive oil drizzle, assembled in 5 minutes with no cooking.

Ingredients
  

  • 16 oz fresh mozzarella balls ciliegine or bocconcini, drained and dried
  • 2 cups cherry tomatoes mixed colors
  • 1 bunch fresh basil leaves
  • 3 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • flaky sea salt
  • freshly cracked black pepper
  • 24 small bamboo skewers or toothpicks

Method
 

  1. Drain and pat dry the mozzarella balls. Wash and dry cherry tomatoes. Select medium basil leaves and fold each into a tight bundle.
  2. Thread each skewer in order: one cherry tomato, one folded basil leaf, one mozzarella ball.
  3. Arrange skewers on a platter or stand upright in a glass. Season with flaky sea salt and cracked black pepper.
  4. Drizzle olive oil and balsamic glaze over the platter right before serving. Serve at room temperature.

Notes

Pat mozzarella completely dry before assembling to prevent the platter from pooling with liquid. Let mozzarella sit at room temperature for 20 minutes before serving for a creamier texture. Drizzle with olive oil and balsamic right before serving, not ahead of time.
