Ingredients
  

  • 1/2 cup cooked carrots steamed or roasted, cooled
  • 1 large frozen banana
  • 1 cup milk oat or whole
  • 1/4 cup plain greek yogurt
  • 2 tbsp walnut halves
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp cream cheese softened, optional for topping

Method
 

  1. **Liquid.** Pour milk into the blender.
  2. **Dairy.** Add yogurt, spices, maple, and vanilla. Blend 20 seconds.
  3. **Walnuts.** Add walnuts. Blend 30 seconds to pulverize.
  4. **Main.** Add cooked carrots and frozen banana.
  5. **Blend.** Blend 45 seconds until silky.
  6. **Serve.** Pour into a tall glass. Swirl softened cream cheese on top. Garnish with chopped walnuts.

Notes

Cook the carrots first. Raw stays gritty. Warm spices make it taste like cake, not carrot juice. Walnuts are essential for the carrot cake flavor.
