- Marinate. Mix olive oil, cumin, paprika, turmeric, cinnamon, cayenne, garlic, lemon juice, salt, and pepper. Coat chicken thighs and marinate at least 30 minutes.
- Cook. Heat a skillet over medium-high heat. Cook chicken thighs 5 to 6 minutes per side until charred and cooked to 165F. Rest 5 minutes, then slice.
- Sauce. Mix 1/4 cup Greek yogurt with 1 minced garlic clove and 1 tablespoon lemon juice for garlic sauce.
- Build. Layer rice, sliced chicken, hummus, cucumber, tomatoes, and pickled onions in bowls. Drizzle with garlic sauce.
Notes
Marinate overnight for the most flavorful chicken. Chicken thighs stay juicier than breasts. Slice the chicken against the grain.
