Chocolate Peanut Butter Energy Bites

Fudgy no-bake energy bites with peanut butter, cocoa, oats, and chocolate chips that taste like candy but are actually healthy.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 3 tbsp cocoa powder
  • 1/4 cup mini chocolate chips
  • 2 tbsp ground flax
  • 1 tsp vanilla

Method
 

  1. Mix. Combine all ingredients in a bowl until dough holds together.
  2. Chill. Refrigerate dough 15-20 minutes.
  3. Roll. Scoop and roll into 1-tablespoon balls.
  4. Set. Chill 30 minutes until firm.

Notes

Wet hands before rolling to prevent sticking.
Store in fridge up to 7 days or freeze 2 months.
