Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 cup mini chocolate chips
  • 2 tablespoons ground flax seed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method
 

  1. Mix. Combine oats, peanut butter, honey, cocoa powder, chocolate chips, flax seed, vanilla, and salt in a large bowl. Stir until everything is evenly mixed and the dough holds together when squeezed.
  2. Chill. Pop the bowl in the fridge for 15 to 20 minutes. This firms up the peanut butter and makes rolling much easier.
  3. Roll. Scoop about 1 tablespoon of dough and roll between your palms into a ball. You should get about 20 bites.
  4. Set. Place the bites on a parchment-lined plate and refrigerate for at least 30 minutes until firm. They hold their shape best when cold.

Notes

Use natural peanut butter that you stir first. It blends into the oats better than the super thick kind. If the dough is too dry, add another tablespoon of honey. Too sticky, add a tablespoon more oats. Kids love rolling these into balls. It is like playing with play dough but edible.
