Chocolate Peanut Butter Protein Balls

No bake chocolate peanut butter protein balls packed with 12g protein each, fudgy and ready in 10 minutes.

Ingredients
  

  • 1 cup natural peanut butter creamy
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1/2 cup chocolate protein powder
  • 3 tbsp cocoa powder
  • 2 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 1/4 tsp kosher salt
  • 1/3 cup mini dark chocolate chips
  • 1-2 tbsp almond milk as needed

Method
 

  1. Whisk peanut butter, maple syrup, and vanilla until smooth.
  2. Stir in oats, protein powder, cocoa, flaxseed, chia, and salt.
  3. If too dry, add almond milk 1 tablespoon at a time. If too wet, add oats.
  4. Fold in mini chocolate chips.
  5. Roll into 16 to 18 balls, about a heaping tablespoon each.
  6. Chill on a parchment lined plate in the fridge for 30 minutes.
  7. Store in an airtight container in the fridge or freezer.

Notes

Use natural peanut butter. Chill 30 minutes for firm balls. Add almond milk 1 tbsp at a time if dough is dry.
