Chocolate Strawberry Baked Oats

Ingredients
  

  • 1/2 cup rolled oats
  • 1 ripe banana
  • 1 large egg
  • 1/4 cup Greek yogurt full fat
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp maple syrup
  • 2 tbsp milk any kind
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • pinch salt
  • 2 tbsp dark chocolate chips
  • 1/4 cup diced fresh strawberries

Method
 

  1. Preheat oven to 350F. Grease a 6 to 8 oz ramekin.
  2. Blend oats, banana, egg, Greek yogurt, cocoa, maple syrup, milk, baking powder, vanilla, and salt 30 to 45 seconds until smooth.
  3. Pour half the batter into the ramekin. Add strawberries and half the chocolate chips. Top with remaining batter and chocolate chips.
  4. Bake 22 to 25 minutes until puffed and a toothpick shows melty chocolate but no raw batter.
  5. Cool 2 minutes. Top with melted chocolate, sliced strawberries, and a dollop of Greek yogurt.

Notes

Always use a ripe banana. Blend the batter until completely smooth. Pull the oats out while the center still jiggles slightly.
