Ingredients
  

  • 1 cup full fat cottage cheese
  • 1 tsp vanilla extract
  • 1/2 cup mixed berries fresh or frozen and thawed
  • 1/4 cup low sugar granola
  • 2 tbsp hemp hearts
  • 1 tbsp honey or maple syrup
  • 1 pinch flaky sea salt

Method
 

  1. **Whip.** Add cottage cheese and vanilla to a blender or food processor. Blend 30 seconds until silky smooth.
  2. **Transfer.** Spoon whipped cottage cheese into a bowl. Spread evenly.
  3. **Layer.** Top with berries on one side.
  4. **Add crunch.** Sprinkle granola and hemp hearts over the top.
  5. **Finish.** Drizzle with honey and finish with a pinch of flaky salt. Eat immediately.

Notes

Use full fat cottage cheese for best texture and satiety. Whip cottage cheese in a blender 30 seconds for silky texture. Use frozen berries thawed for extra juice and no plastic clamshells.
