Method
- **Whisk.** In a small bowl whisk eggs, cottage cheese, salt, and pepper until combined. Some small lumps of cottage cheese are fine.
- **Melt.** Melt butter in a nonstick skillet over low heat.
- **Pour.** Pour in egg mixture.
- **Stir.** Stir gently and constantly with a silicone spatula. Push eggs from outside to center as they set, about 3 minutes.
- **Pull.** Remove from heat when eggs are just set but still slightly wet.
- **Serve.** Slide onto a plate. Top with chives. Eat immediately.
Notes
Whisk cottage cheese into raw eggs for silky creamy texture. Cook over low heat. High heat turns eggs rubbery. Stir constantly but gently with a silicone spatula.
