Crispy Honey Lime Salmon

Ingredients
  

  • 4 fillets salmon (6 oz each) skin on or off
  • 3 tbsp honey
  • 3 tbsp fresh lime juice about 2 limes
  • 2 tbsp low sodium soy sauce
  • 4 cloves garlic minced
  • 1 tsp grated lime zest
  • 1/2 tsp red pepper flakes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped cilantro
  • 2 tbsp sliced green onions

Method
 

  1. Pat salmon very dry. Season both sides with salt and pepper.
  2. Whisk together honey, lime juice, soy sauce, garlic, lime zest, and red pepper flakes.
  3. Heat olive oil in a heavy skillet over medium-high heat until shimmering.
  4. Add salmon skin side down. Press lightly for 30 seconds. Cook 4 to 5 minutes undisturbed.
  5. Flip and cook another 2 to 3 minutes for medium.
  6. Pour glaze around salmon. Simmer 60 to 90 seconds, basting, until sticky.
  7. Plate with rice. Top with cilantro, green onions, and lime wedges.

Notes

Pat salmon completely dry for the crispiest crust. Get the pan ripping hot before adding salmon. Make the glaze in the same pan after the salmon comes out.
