Ingredients
  

  • 4 boneless skinless chicken breasts about 2 lbs
  • 2 tbsp butter
  • 3 large yellow onions thinly sliced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp sugar
  • 4 cloves garlic minced
  • 1 tsp fresh thyme or 1/2 tsp dried
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 1.5 cups shredded gruyere
  • 2 tbsp fresh parsley for garnish

Method
 

  1. **Caramelize.** Melt butter in a large skillet over medium. Add onions, salt, pepper, and sugar. Cook 10 minutes stirring often until deeply golden.
  2. **Bloom.** Stir in garlic and thyme. Cook 30 seconds.
  3. **Layer.** Place chicken breasts in the slow cooker. Pour caramelized onions on top.
  4. **Pour.** Whisk beef broth, Worcestershire, and balsamic. Pour over chicken.
  5. **Cook.** Cook on low 6 hours or high 3 hours.
  6. **Cheese.** Sprinkle gruyere over chicken. Cover and cook 5 minutes until melted.
  7. **Serve.** Top with parsley. Serve over mashed potatoes or rice.

Notes

Caramelize onions in butter for 10 minutes before adding to slow cooker. Use boneless skinless chicken thighs or breasts for tender results. Add gruyere only in the last 5 minutes for perfect melt.
