- Pat the steak cubes completely dry with paper towels.
- Toss with salt, pepper, smoked paprika, and garlic powder. Let rest 10 minutes.
- Heat a cast iron skillet over high heat for 3 minutes until smoking. Add avocado oil.
- Add steak in a single layer. Sear 90 seconds on the first side without moving, flip and sear 60 seconds more.
- Reduce heat to medium. Add butter, garlic, Worcestershire, and thyme. Spoon foaming butter over the steak for 45 seconds.
- Transfer to a warm bowl with the pan butter and let rest 3 minutes.
- Scatter parsley and red pepper flakes on top, finish with flaky salt, and serve.
Notes
Pat the steak completely dry for a great sear. Use cast iron for best results. Add butter only after the sear.
