Ingredients

  • 1 pound ground turkey
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/3 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha
  • 1 can (8 ounces) water chestnuts, drained and diced
  • 3 green onions, sliced
  • 1 head butter lettuce, leaves separated

Method

  1. Brown. Heat sesame oil in a large skillet over medium-high heat. Add ground turkey and cook for 5 to 6 minutes, breaking it apart, until browned and cooked through.
  2. Season. Add garlic and ginger, cook 30 seconds. Stir in hoisin sauce, soy sauce, rice vinegar, and sriracha. Cook 2 minutes until the sauce thickens and coats the turkey.
  3. Add. Toss in the diced water chestnuts and most of the green onions. Stir for 1 minute to heat through.
  4. Serve. Spoon the turkey mixture into butter lettuce cups. Top with remaining green onions and a drizzle of sriracha.

Notes

Butter lettuce works best because the leaves are cup-shaped and don't crack. Water chestnuts add a crunchy texture that makes these wraps special. Don't skip them. Use lean ground turkey (93/7) for the best texture. Too lean (99%) can be dry.
