Ingredients
  

  • 1 tbsp olive oil
  • 1 medium yellow onion diced
  • 1 lb 93/7 ground turkey
  • 1 medium sweet potato diced 1/2 inch cubes
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 can black beans drained and rinsed, 15 oz
  • 1/2 cup low sodium chicken broth
  • 1/4 cup cotija cheese or feta, crumbled
  • 2 tbsp fresh cilantro chopped
  • 1 lime cut into wedges

Method
 

  1. **Saute.** Heat oil in a 12 inch skillet over medium high. Add onion. Cook 3 minutes until softened.
  2. **Brown.** Add ground turkey. Break apart with a wooden spoon. Cook 5 minutes until no pink remains.
  3. **Add veg.** Stir in sweet potato cubes and garlic. Cook 2 minutes.
  4. **Bloom spices.** Sprinkle cumin, paprika, and chili powder over the top. Stir 30 seconds until fragrant.
  5. **Simmer.** Pour in broth and add black beans. Cover and simmer 10 minutes until sweet potato is fork tender.
  6. **Finish.** Top with cotija, cilantro, and a squeeze of lime. Serve hot.

Notes

Use 93/7 ground turkey for best protein to fat ratio. Dice sweet potato into uniform 1/2 inch cubes so they cook at the same rate. Bloom spices in hot fat for 30 seconds to unlock maximum flavor.
