Ingredients
  

  • 2 large ripe avocados pitted and peeled
  • 1/3 cup raw cacao powder sifted
  • 1/3 cup powdered monk fruit sweetener or to taste
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 2 tbsp sugar free dark chocolate chips for topping
  • 2 tbsp fresh raspberries for topping

Method
 

  1. **Load.** Add avocados, sifted cacao, monk fruit, almond milk, vanilla, and salt to a high powered blender or food processor.
  2. **Blend.** Blend 60 seconds until completely silky smooth. Stop and scrape down the sides once.
  3. **Taste.** Taste and add another 1 tablespoon monk fruit if you want it sweeter.
  4. **Chill.** Spoon into 4 small ramekins. Press plastic wrap directly on the surface and chill 30 minutes.
  5. **Top.** Top with sugar free chocolate chips and fresh raspberries before serving.

Notes

Use very ripe avocados that yield to gentle pressure. Hard avocados leave grainy mousse. Sift cacao powder before blending to avoid lumpy bites. Chill the mousse 30 minutes before serving for the firmest texture.
