Method
- Preheat oven to 350F and grease a small 6x8 inch baking dish.
- Blend oats, egg, yogurt, almond milk, maple syrup, butter, lemon zest and juice, vanilla, baking powder, and salt for 45 seconds.
- Pour batter into the prepared dish.
- Scatter blueberries across the top.
- Bake 22 to 25 minutes until the top is lightly golden and a toothpick comes out clean.
- Whisk powdered sugar with lemon juice and zest for the glaze.
- Drizzle glaze over warm oats and top with extra blueberries.
Notes
Blend rolled oats for cake texture. Use fresh lemon zest and juice for brightness. Let cool 5 minutes before glazing.
