Marry Me Chicken (Lightened Up)

Creamy, garlicky skillet chicken with sun-dried tomatoes and parmesan made lighter with light cream cheese.
Servings: 4

Ingredients
  

  • - 4 boneless skinless chicken breasts
  • - 4 oz light cream cheese 1/3 less fat
  • - 3/4 cup low-sodium chicken broth
  • - 1/3 cup sun-dried tomatoes chopped
  • - 3 cloves garlic minced
  • - 1/3 cup grated parmesan cheese
  • - 1 teaspoon Italian seasoning
  • - 1/2 teaspoon red pepper flakes
  • - 1 tablespoon olive oil
  • - Fresh basil for topping
  • - Salt and pepper to taste

Method
 

  1. **Sear.** Season chicken with salt, pepper, and Italian seasoning. Sear in olive oil for 3 to 4 minutes per side until golden. Remove and set aside.
  2. **Build.** Cook garlic for 30 seconds in the same skillet. Add broth and scrape up the brown bits.
  3. **Melt.** Stir in light cream cheese until smooth. Add sun-dried tomatoes, parmesan, and red pepper flakes.
  4. **Bake.** Return chicken to the skillet and bake at 400°F for 15 to 18 minutes until cooked through.
  5. **Finish.** Top with fresh basil and spoon extra sauce over each piece.

Notes

- Sear the chicken until properly golden for the best sauce flavor.
- Use an oven-safe skillet to go from stovetop to oven without extra dishes.
- Scrape up the brown bits from the pan when adding broth for maximum flavor.
