One Pot Spinach Tortellini Soup

A quick, hearty soup with cheese tortellini, baby spinach, and tomatoes all cooked in one pot.

Ingredients
  

  • - 20 oz cheese tortellini
  • - 4 cups baby spinach
  • - 1 onion 3 cloves garlic
  • - 1 can diced tomatoes
  • - 6 cups chicken broth
  • - 1 tsp Italian seasoning
  • - Parmesan

Method
 

  1. **Sauté.** Cook onion 3 to 4 min, garlic 30 seconds.
  2. **Simmer.** Add tomatoes, broth, Italian seasoning. Boil.
  3. **Cook.** Add tortellini, cook 3 to 5 minutes.
  4. **Wilt.** Stir in spinach 1 minute. Top with parmesan.

Notes

- Use refrigerated tortellini for best texture.
- Don't overcook tortellini.
- Add extra broth when reheating.
