Ingredients
  

  • 1.5 cups frozen pineapple chunks
  • 1/2 frozen banana
  • 1 cup full fat coconut milk shake the can
  • 1/2 cup pineapple juice
  • 1 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • 2 tbsp shredded coconut optional for topping

Method
 

  1. **Liquid.** Pour coconut milk and pineapple juice into the blender.
  2. **Brightness.** Add lime juice and vanilla.
  3. **Fruit.** Add frozen pineapple and banana.
  4. **Blend.** Blend 60 seconds until silky tropical.
  5. **Check.** Add more coconut milk if too thick.
  6. **Serve.** Pour into a tall glass. Top with toasted coconut. Serve immediately.

Notes

Canned full fat coconut milk. Shake before measuring. Frozen pineapple, not fresh. A splash of lime brightens the tropical flavor.
