- Sear. Season pork tenderloin with garlic powder, paprika, thyme, salt, and pepper. Heat olive oil in an oven-safe skillet over high heat. Sear the tenderloin on all sides, about 2 minutes per side, until a golden crust forms.
- Roast. Transfer the skillet to a 400F oven. Roast for 18 to 22 minutes until the internal temperature reaches 145F. Remove and let rest 10 minutes before slicing.
- Sauce. While the pork rests, melt butter in a saucepan over medium heat. Add diced apples, brown sugar, and cinnamon. Cook for 5 to 6 minutes until the apples are soft. Add apple cider and simmer 2 minutes until saucy.
- Serve. Slice the pork into 1/2-inch thick rounds. Spoon the warm apple sauce over the top.
Notes
Pull the pork at 145F. It will rise 5 degrees while resting and stay perfectly juicy. Resting is non-negotiable. 10 minutes minimum. This keeps the juices inside the meat. Use firm apples like Granny Smith or Honeycrisp. They hold their shape when cooked.
