Quesadillas

Crispy, melty quesadillas made on the stovetop with gooey cheese and optional chicken and veggies, perfect for dipping.

Ingredients
  

  • 4 large flour tortillas (8 to 10-inch)
  • 2 cups shredded cheese (Jack, cheddar, mozzarella, or blend)
  • 1 1/2 cups cooked chicken, shredded or chopped (optional)
  • 1/2 cup sliced bell pepper (optional)
  • 1/4 cup sliced red onion (optional)
  • 1 tsp taco seasoning (optional)
  • fine sea salt and freshly ground black pepper
  • 2 tbsp butter or oil, for cooking
For serving
  • salsa, sour cream, guacamole, cilantro, lime (optional)

Method
 

  1. Prep filling. If using chicken, toss it with taco seasoning plus a pinch of salt and pepper.
  2. Heat the pan. Warm a large skillet over medium heat. Add a small amount of butter or oil.
  3. Assemble. Place 1 tortilla in the skillet. Sprinkle an even layer of cheese over half the tortilla. Add chicken and any veggies. Top with a little more cheese, then fold the tortilla over.
  4. Cook. Cook 2 to 3 minutes per side until golden and the cheese is fully melted. Press gently with a spatula as it cooks.
  5. Repeat. Transfer to a board and repeat with remaining tortillas, adding more butter/oil as needed.
  6. Slice and serve. Rest 1 minute, slice into wedges, and serve with salsa, sour cream, and guacamole.

Notes

  • Medium heat is the secret for melty cheese without burning the tortilla.
  • If your fillings are cold, warm them slightly first so the tortilla doesn’t overbrown while the center heats through.
  • Leftovers reheat best in a dry skillet or air fryer to bring back the crisp.
