Method
- Preheat oven to 425F. Line a sheet pan with parchment.
- Toss halved baby potatoes with 1 tbsp oil, half the garlic, salt, and pepper. Roast 10 minutes alone.
- In a bowl toss sausage, peppers, onion, and broccoli with remaining oil, garlic, paprika, italian seasoning, and red pepper flakes.
- Pull sheet pan from oven. Push potatoes to one half. Add the sausage veggie mix to the other half in a single layer.
- Roast 20 to 25 minutes, tossing once halfway, until sausage is caramelized and vegetables have crispy edges.
- Sprinkle with parsley and a squeeze of lemon. Serve hot.
Notes
Give the potatoes a 10 minute head start before adding the rest. Keep the pan in a single layer for crispy edges. High heat at 425F is essential.
