Ingredients
  

  • 1 lb large shrimp peeled and deveined, 16/20 count
  • 4 cups broccoli florets
  • 2 tbsp avocado oil or neutral oil
  • 4 cloves garlic minced
  • 1 tbsp grated fresh ginger
  • 1/4 cup low sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds
  • 2 tbsp sliced scallions

Method
 

  1. **Blanch.** Bring a pot of salted water to a boil. Add broccoli. Cook 2 minutes. Drain and set aside.
  2. **Sauce.** In a small bowl whisk soy sauce, rice vinegar, honey, and cornstarch slurry.
  3. **Shrimp.** Heat 1 tbsp oil in a large skillet or wok over high heat. Add shrimp in a single layer. Cook 90 seconds per side until opaque. Transfer to a plate.
  4. **Aromatics.** Add remaining oil. Add garlic and ginger. Stir 30 seconds until fragrant.
  5. **Combine.** Return broccoli to the pan. Stir 1 minute. Pour in sauce. Simmer 1 minute until glossy.
  6. **Finish.** Return shrimp to the pan. Drizzle with sesame oil. Toss to coat.
  7. **Serve.** Top with sesame seeds and scallions. Serve over rice.

Notes

Use large 16/20 count shrimp. Small shrimp overcook too fast. Pat shrimp dry before adding to the pan. Blanch broccoli 2 minutes for bright tender crisp texture.
