Shrimp Scampi with Zoodles

Buttery garlic shrimp over zucchini noodles in a lemon-white wine sauce, ready in 15 minutes.

Ingredients
  

  • - 1 lb large shrimp
  • - 4 zucchini spiralized
  • - 3 tbsp butter
  • - 2 tbsp olive oil
  • - 6 cloves garlic sliced
  • - 1/4 cup white wine
  • - Juice + zest of 1 lemon
  • - Red pepper flakes parsley, parmesan

Method
 

  1. **Sear.** Cook shrimp 1 to 2 min per side. Remove.
  2. **Sauce.** Cook garlic 30 sec, add wine and lemon, reduce by half.
  3. **Toss.** Add zoodles, toss 1 to 2 minutes until just warm.
  4. **Finish.** Return shrimp, add zest and parsley. Serve with parmesan.

Notes

- Pat shrimp very dry before searing.
- Don't overcook zoodles, 1 to 2 minutes max.
- Salt and drain zoodles before cooking.
