Method
- **Crust.** Crush 20 Golden Oreos into fine crumbs. Mix with 6 tbsp melted butter. Press into a 9 inch springform pan and freeze 20 minutes.
- **Crunch.** Pulse remaining 10 Golden Oreos with 1/2 cup freeze dried strawberries until coarse crumbs. Toss with remaining 2 tbsp melted butter. Set aside.
- **Beat.** Beat cream cheese, powdered sugar, strawberry puree, and vanilla 2 minutes until smooth and lump free.
- **Whip.** In a separate bowl whip cold cream to stiff peaks, 3 minutes.
- **Fold.** Gently fold whipped cream into the cheesecake mixture in 3 additions until no white streaks remain.
- **Layer.** Spread filling over the crust and smooth the top. Chill 6 hours.
- **Top.** Sprinkle the strawberry crunch topping over the chilled cheesecake. Garnish with the remaining 1/2 cup whole freeze dried strawberries scattered on top.
Notes
Use freeze dried strawberries, not fresh, for the crunch topping. Fresh berries make it soggy. Soften cream cheese 1 hour at room temp for a smooth lump free filling. Use Golden Oreos for the most authentic strawberry shortcake bar flavor.
