Method
- **Assemble.** Place 8 graham crackers on a tray. Scoop softened vanilla ice cream onto each, about 1/3 cup per cracker. Top with another graham cracker and press gently.
- **Freeze.** Freeze sandwiches 30 minutes until firm.
- **Crumble.** Pulse Golden Oreos with 1/2 cup freeze dried strawberries in a food processor until coarse crumbs. Toss with melted butter and powdered sugar.
- **Roll.** Take sandwiches from freezer one at a time. Roll exposed ice cream edges in the strawberry crunch crumble, pressing to coat.
- **Refreeze.** Place coated sandwiches back on the tray and freeze another 30 minutes.
- **Wrap.** Wrap each sandwich individually in plastic wrap.
- **Serve.** Sprinkle whole freeze dried strawberries over the top of each sandwich just before serving.
Notes
Use freeze dried strawberries, not fresh, for the crunch coating. Freeze the ice cream layer between graham crackers 30 minutes before rolling in crumbs. Use Golden Oreos instead of graham crackers for the most authentic strawberry shortcake bar flavor.
