Teriyaki Salmon Rice Bowl

Ingredients
  

  • - 4 salmon fillets 6 oz each
  • - 2 cups jasmine rice cooked
  • - 1/4 cup soy sauce
  • - 2 tablespoons honey
  • - 1 tablespoon rice vinegar
  • - 1 tablespoon sesame oil
  • - 2 cloves garlic minced
  • - 1 teaspoon ginger grated
  • - 1 tablespoon olive oil
  • - 2 cups broccoli
  • - 1 cup edamame
  • - 1 cucumber sliced
  • - Sesame seeds and green onions

Method
 

  1. **Mix.** Whisk soy sauce, honey, vinegar, sesame oil, garlic, and ginger.
  2. **Sear.** Cook salmon 3 to 4 minutes per side in hot skillet.
  3. **Glaze.** Pour sauce over salmon, reduce 1 to 2 minutes.
  4. **Assemble.** Build bowls with rice, salmon, and vegetables. Drizzle with sauce.

Notes

- Pat salmon dry for best sear.
- Sauce thickens quickly, have everything ready.
