- Prep. Preheat oven to 375F. Cut tops off peppers, remove seeds, and place in a baking dish.
- Cook. Saute onion in olive oil 3 to 4 minutes, add garlic for 30 seconds.
- Brown. Add turkey, cook 5 to 6 minutes until done. Season with spices.
- Mix. Stir in rice and tomatoes. Simmer 2 to 3 minutes.
- Stuff. Fill each pepper with the mixture. Top with mozzarella.
- Bake. Cover with foil, bake 30 minutes. Uncover, bake 10 to 15 more minutes until cheese is golden.
Notes
Use day-old rice for best results.
