Method
- **Render.** Crisp pancetta 5 to 6 min. Remove, keep fat.
- **Sear.** Brown zucchini 2 to 3 min per side.
- **Whisk.** Combine yolks, egg, pecorino, pepper.
- **Toss.** Off heat, add pasta to pan, pour egg mix, toss with pasta water until silky.
