Zucchini Carbonara

Classic carbonara with golden seared zucchini, crispy pancetta, and a silky egg-pecorino sauce.

Ingredients
  

  • - 12 oz spaghetti
  • - 2 zucchini sliced
  • - 6 oz pancetta
  • - 3 egg yolks + 1 egg
  • - 1 cup pecorino romano
  • - 2 cloves garlic
  • - Black pepper

Method
 

  1. **Render.** Crisp pancetta 5 to 6 min. Remove, keep fat.
  2. **Sear.** Brown zucchini 2 to 3 min per side.
  3. **Whisk.** Combine yolks, egg, pecorino, pepper.
  4. **Toss.** Off heat, add pasta to pan, pour egg mix, toss with pasta water until silky.

Notes

- Pan must be off heat for egg mixture.
- Reserve plenty of pasta water.
- Serve immediately.
