Method
- **Flatten.** Roll each slice of bread flat with a rolling pin. Set aside.
- **Mix.** Beat cream cheese, strawberry jam, powdered sugar, and 1 tsp vanilla until smooth.
- **Spread.** Spread 2 tablespoons cream cheese mixture on each flattened bread slice. Lay strawberry slices in a row across one edge.
- **Roll.** Roll up tightly starting from the strawberry edge to make a tight log.
- **Custard.** Whisk eggs, milk, 1 tsp vanilla, and 1/2 tsp cinnamon in a shallow dish.
- **Coat.** Mix granulated sugar and 1 tsp cinnamon on a plate. Dip each roll up in the egg custard, then roll in cinnamon sugar.
- **Fry.** Melt butter in a skillet over medium heat. Place roll ups seam side down and cook 2 minutes per side, rotating until all 4 sides are golden, about 8 minutes total. Serve warm.
Notes
Flatten bread slices with a rolling pin to make them pliable for rolling. Use day old white sandwich bread. Fresh bread tears when rolled. Seal the roll seam side down in the pan first to glue the edge shut.
